Marinara Sauce September 10, 2006

1 T olive oil
1 c diced onion

1 c sliced mushrooms

1/4 c diced green bell pepper
6 garlic cloves, crushed
3/4 c dry red wine
3/4 c water
1/4 c chopped fresh parsley
1 T sugar
1 tsp dried oregano
1 tsp dried basil
1/2 tsp dried rosemary, crushed
1/2 tsp pepper
1/4 tsp salt
2 bay leaves
1 (28 oz) can whole tomatoes, chopped and undrained
1 (6 oz) can tomato paste

Heat oil in a dutch oven over med-high heat. Add onion, mushrooms, bell pepper and garlic; saute 5 minutes or until tender. Add wine and remaining ingredients; bring to a boil. Cover, reduce heat, and simmer 30 minutes, stirring occasionally.
