Enchilada Stack September 12, 2006

7 (9”) flour tortillas

1 lb. Lean ground beef (or shredded chicken or beans)

2 (8 ounce) cans tomato sauce

1 (4 ounce) can green chilies, chopped

½ cup sliced black olives

½ cup sliced green onions (plus extra for top)

2 cups shredded cheddar cheese (plus extra for top)

Sour cream

Salsa or taco sauce


Brown meat and drain.  Add 1 can tomato sauce, green chilies, black olives; mix together.  In greased baking dish or large pie plate, place 1 tortilla and spread with 1/6 of meat mixture, 1/6 of onions and 1/6 of cheese.  Repeat 6 times.  Top with last tortilla.  Pour 1 can tomato sauce over the top of the stack and sprinkle with remaining green onions and cheese.  Bake at 325 F for 30 minutes, or until heated through.  Cut into pie-shaped wedges and top with sour cream and salsa.
