Salsa Cornmeal Bread September 20, 2006

1/4 c water

1 c thick salsa

1 1/2 tbsp olive or vegetable oil

3/4 tsp salt

1 1/2 tbsp sugar

2 c all purpose or bread flour

3/4 c blue or yellow cornmeal

1/2 – 1 tbsp minced jalapeno pepper (optional)

1 1/2 tsp quick-rise or bread machine yeast

Place all ingredients in the bread machine pan in the above order. Place pan in machine; set at dough setting.

After cycle is complete, remove dough and shape on a greased cookie sheet. Allow to rise; bake at 350 until done.

Italian Cheese Bread September 10, 2006

1 ½ c water

2 T olive oil

4 c bread flour

2 tsp salt

2 T sugar

1/3 c grated Parmesan cheese

1 T Italian seasoning (or a mixture of dried basil, oregano and thyme)

2 tsp quick-rise or bread machine yeast1 ½ tsp fennel and/or celery seeds (optional)  Place all ingredients in bread machine pan in the above order. 

Place pan in machine, select the dough setting. When machine cycle is complete, shape dough into loaf, bread sticks or buns on a greased cookie sheet; bake until golden brown.

Named after the friend who made this recipe famous, these go with anything and everything – even just a stick of butter.

1 egg plus water to equal 11 ounces

3 c bread flour

3 T sugar

1 T dry instant milk

1 tsp salt

2 T vegetable oil

2 tsp bread machine yeast

Layer ingredients in bread machine, set to dough setting. If dough looks too sticky, add more flour.

When the machine has finished, remove dough and shape into 12 buns, or 1 loaf, with bacon-greased hands. Allow to rise; bake until golden brown.
